Use this healthy dairy choice in any dish that requires bitter cream. Serve it with baked potatoes and contemporary chives, with tacos or enchiladas, or with Mushroom Stroganoff.

Makes 1½ cups

  • 1 bundle further firm lite silken tofu, tired
  • 1 tablespoon lemon juice
  • 1 tablespoon crimson wine vinegar
  • Salt to style
